Producer: Fazio Winery and vineyard in Erice
Area of production: produced in the vineyards in the Doc Erice territory
Grapes: Nero d’Avola 100%
Altitude: 250/300 mt. above sea level.
Density: 4.000/4.500 plants per ha.
Production technique: harvesting in boxes of only healthy grapes, which have reached full maturity, destalked, vinification in red, with traditional soft pressure of the skins and a long maceration at a controlled temperature. A careful “élevage” in Allier-Troncaise barrique for 24 months. Cold bottled in the winery and refined in a termocontrolled environment for one year.
Colour: intense ruby red, with light orange reflections.
Perfume: hints of red berries blended in perfect balance with elegant notes of tabacco, cocoa, liquorice and black pepper.
Taste: powerful yet delicate flavour, soft and harmonious, with a persistant final taste, its smooth structure is due to the sweetness and softness of the tannins.
Bottle: 75 cl - 14% Vol. Best served at: 16° C.
Accompaniment: ideal with important dishes, with strong flavoured red meat and game. Excellent with stuffed leg of lamb.
